3. Elena’s 5 Test Kitchen Commandments
1. Pat Bone-Dry: Surface moisture turns to steam. Steam prevents Maillard browning and ruins crispy skin. Use double paper towels.
2. Salt 45 Mins Ahead: Salt draws moisture out, dissolves, and diffuses deep into the muscle fiber, locking in moisture during cooking.
3. Don’t Crowd the Pan: Leave at least 1 inch between pieces. Crowded chicken boils in its own juices instead of crisping.
4. Respect the 5-Minute Rest: Slicing hot chicken immediately dumps up to 25% of juices onto the cutting board. Tent and wait.
5. Trust the Probe, Not Time: Oven temps vary by 25°F–50°F. The digital instant-read thermometer is your only true metric.
